Downwind
The vineyard is 14 years old and the harvest is carried out by hand, in the second ten days of September, using small wagons.
Winemaking involves destemming of the grapes and a cold pre-fermentation maceration, followed by a controlled temperature maceration lasting two weeks. After fermentation, the wine rests in steel barrels for 6 months and then refines in the bottle for at least a year.
The soil of the vineyard is yellow sandstone, with south/east exposure and an altitude of 150 m above sea level. The longevity of the wine is indefinite and goes perfectly with grilled meats and roasts.
